VEGAN MASALA TAU KWA (EXTRA FIRM TOFU)

An Indian twist to Tau kwa (extra firm tofu). This Vegan masala Tau kwa is an amazing filling for Roti rolls. Add a bit of mint chutney or mango pickle, lettuce and pickled onions with the filling to make a quick yummy roti roll. A tasty lunch option for kids! Works great in sandwiches too along with some spicy mint or coriander chutney!


INGREDIENTS:

  • 400 gms Tau Kwa, grated

  • 1 tbsp oil

  • 1 tsp cumin seeds

  • 1 cardamom

  • 1” cinnamon

  • 2 cloves

  • 1 large onion finely chopped

  • 1-2 green chillies finely chopped ( increase more if you like spice)

  • 1 large tomato finely chopped (remove the seeds and juice from the center)

  • 1/2 green capsicum finely chopped

  • 1 tsp grated ginger

  • 1/2 tsp garam masala powder

  • 1/2 tsp coriander powder

  • 1/4 tsp turmeric powder

  • 1/2 tsp chilli powder

  • 1 tbsp coriander leaves chopped

METHOD:

  • Heat oil in a wide saucepan on medium pan

  • Add cumin seeds, cardamom, cinnamon and cloves. Fry for a min till fragrant

  • Add onions and sauté till light brown, add grated ginger and green chillies and fry for a min

  • Add the tomatoes and green capsicum, mix well and cook on a slow flame for 2 to 3 minutes, stirring continuously till tomatoes become soft and capsicums still have the crunch

  • Add the Garam masala powder, turmeric powder, chilli powder and coriander powder, mix well and cook on a medium flame for a min or two, while stirring continuously

  • Add the grated tau kwa and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Check for salt and spice, add more if required.

  • When done, garnish with chopped coriander leaves
