Italian Pasta Salad

When I crave crunchy, lemony salad without any sweetness to it, I love this Italian pasta salad, loaded with lemon juice, mustard, red wine vinegar, salty olives, tangy sun dried tomatoes, some fresh and dried herbs to make it so flavourful topped with mini mozzarella cheese balls!! 😋

SALAD INGREDIENTS:
125 gms Shell pasta or macaroni
1/4 cup Red bell pepper diced
1/4 cup Yellow bell pepper diced
1/4 cup diced Japanese cucumber
1/4 cup halved cherry tomatoes
1/4 cup diced red onions (go less if you don’t like raw onions)
1/8 cup halved Kalamata olives
1/8 cup chopped sun dried tomatoes
10-12 Mozarella minis
2-3 tbsp minced fresh parsley or dill or basil leaves

ITALIAN SALAD DRESSING:
1/4 cup Olive oil
2 tbsp Red wine vinegar
1 tbsp Dijon Mustard
1 tsp Lemon juice
1 clove garlic mince
1/8 tsp dried oregano, basil and thyme
1/8 tsp pepper powder
1/2 tsp salt or more according to taste
METHOD:
In a large bowl take all salad ingredients and toss it
Whisk all salad dressing ingredients in a bowl to make the dressing
Add the dressing to the salad and mix well
Check for salt, add more if required
Serve immediately
