BENGKOANG OR JICAMA SALAD

This native root vegetable of Mexico goes by many names such as Jícama, yam bean, Mexican turnip, Mexican potato and Bengkoang (in Asia). Its starchy, crunchy and moist flesh is slightly sweet and nutty, which makes for a great salad dressed by a good amount of lime juice!

Just chop the Jícama into bite size, add some halved cherry tomatoes, raisins, pomegranate seeds, a handful of fresh herbs like coriander and mint leaves, 3-4 lime juices, salt and pepper. It’s simple and refreshing!!
